AZTEC SALAD


Ingredients:

two 15-oz cans black beans 1/2 t crushed red pepper flakes (or to taste)
1/2 C finely chopped red onion
2 T seasoned rice vinegar
1 green bell pepper, diced 2 T apple cider vinegar
1 red or yellow bell pepper, diced 1 lime or lemon, juiced
2 tomatoes, diced 2 garlic cloves, minced
2 C frozen corn, thawed 2 t ground cumin
3/4 c chopped fresh cilantro (opt.) 1 t ground coriander
 
Drain and rinse the beans and place them in a large salad bowl with the onion, peppers, tomatoes, corn, and cilantro. In a small bowl combine the remaining ingredients for the dressing. Pour over the salad and toss gently to mix.
 

     

    Serves 8 to 10.
