MUSHROOM HORSERADISH SAUCE


Ingredients:

1 tsp olive oil 2 T red wine [or red wine vinegar]
1/2 onion, finely chopped 2 tsp prepared horseradish
1/4 tsp salt 1 clove garlic, finely chopped 1 T tamari
6 mushrooms, sliced pepper to taste
1 C water 1/4 tsp paprika
Instructions:

Heat oil in saucepan and add onion. Sprinkle salt over the onion, cover, and cook over med. heat until onion is golden. Add garlic and mushrooms and cook, covered, 3 min. Add remaining ingredients and cook, covered, 20 min. more. [For a thicker sauce, blend 1 T cornstarch with 2 T water. Add to sauce and simmer until thickened.]

Makes 1-1/2 C.
