Pumpkin Pie

Low Fat and Delicious!


Ingredients:

1-1/2 (10.5 oz.) packages extra-firm silken tofu
2 C canned or cooked pumkin  
2/3 C Maple Syrup  
1 tsp vanilla  
1 T pumpkin pie spice*  
1 unbaked 9" pie crust  

*pumpkin pie spice can be substituted for with 1-1/2 tsp ground cinnamon, 3/4 tsp ground ginger, 1/4 tsp ground nutmeg, and 1/8 tsp ground cloves.

 

Instructions:

Preheat oven to 350

Drain Tofu and blend in a food processor or blender until smooth. Add remaining ingredients and blend well. Pour into pie crust. Bake for approximately 1 hour. Filling will be soft, but will firm up as it chills. Chill and serve
