Red Potato Salad
From PETA's The Compassionate Cook
(available from the RAVS on-line bookstore!)

 

So inexpensive and simple to make you might feel guilty. Don't - no one will guess!


Ingredients for salad:

12-15 large unpeeled red potatoes - cut into bite size wedges
4 stalks celery - sliced
1 large green bell pepper, cut into small squares
6 green onions, chopped  
garlic salt and pepper to taste  
   

Ingredients for dressing:

 
6 cloves garlic, minced 3 tsp dried tarragon
3 tsp dried marjoram 3 tsp dried mustard
1-1/2 tsp salt 3/4 tsp pepper
1-1/2 cups olive oil 6 T red wine vinegar
   

Combine all the dressing ingredients in a jar with a tight lid. Shake the jar and let stand.

Boil the potatoes for about 15 minutes or until tender. In a large bowl, mix all the ingredients while the potatoes are still hot (I recommend using about 2/3 of the dressing, and adding more as necessary. Leftover dressing is great for garden salads).

Chill for 2 to 3 hours.
